Salmon on a pea puree, La Petite Cave, Saignon
We ate at La Petite Cave five or six times during our stay. The chef/owner Andrew Goldsworthy, is a wonderful, imaginative chef. This was his salmon dish one night. The peas just melted and the salmon was that wonderful crisp outside/moist inside perfect, topped by crisp bacon.

Three out of four isn't bad. The other three would have been fine on their own.
ReplyDeleteBesides me not eating meat - doesn't the strong and salty flavor of bacon disturb the salmon?
